The following is a simple almond-fried chicken recipe that my family enjoys. Try it with a side of sautéed tomatoes for a dose of lycopene, making a super healthy take on good old chicken parmesian.

Heart Healthy Fried-Almond Chicken Recipe


  • 1/4 cup (250 mL) olive oil
  • 2 large eggs (or egg substitute)
  • 1 cup almond flour
  • 1 tsp. paprika
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. dried thyme (optional)
  • 1 tsp. chipotle powder (optional)
  • 2 pounds (900 g) skinless chicken breasts, butterflied


Heat oil in large frying pan to 350F (175C) and preheat oven to 400F (205C).
Whisk eggs in medium sized bowl.
Combine all dry ingredients in large bowl and mix well.
Dip chicken in whisked eggs.
Coat/cover chicken in dry mixture and place in hot oil. Allow both sides to brown (about 2 minutes each side).
Place drying rack on sheet pan and assemble check on the rack so there is space between all pieces.
Put chicken in oven for 10-15 minutes. Remove and serve.
